Site Selection
Site Area Location for Fine Dine Restaurants
A minimum carpet area of 2500-3500 sq. ft with main street frontage is preferable. However lesser area could also be considered.
Ground floor is most preferable. Any other floor will do provided access is easy.
Property for a site may be purchased, leased, or contracted for through a third party.
40% area has to be allotted for kitchen, stores, rest rooms, staff cafeteria, locker room, fuel storage etc. Though concept of live kitchen may require more area.
There should be adequate water and electricity supply and proper drainage system with provision of genets.
All legal and neighbourhood clearances should be obtained.
There should be enough parking spaces.
There should be separate access for the guests and for the staff and supplies.
Stand alone high street restaurants preferred over space in Malls.
Ideally there should be a wide range of users giving both a day and nighttime activity to the area.

Since 1920 Moti Mahal has emerged as a leader for inventing new dishes. Our menu is our identity. Along with the old closely guarded secret recipes, new one’s have also taken place in the menu. Though Moti Mahal has always been famous for Non Vegetarian Tandoori grills and Curries, however, the menu has equal number of vegetarian delights.
Although the basic menu consists of the following favourites, we are always on the lookout for innovative recipes that go with the target guests depending upon the demographic analysis and our experience.

Our marketing team comprising of Food and Beverage Managers and Executive Chefs play an important role in identifying raw materials from the local market as per our standard specifications and also do price analysis for keeping the food cost under control.

Human Resources

The Human Resources Department is split into several functions, which help in defining HR policies, assisting in procurement, training and inducting human resources for the operation of the food outlets.

The Training & Development Team:

This team aims to support and develop team members to their fullest potential, using various programmes such as the Chef training programme, as well as the Developing Leaders training programme for all levels of restaurant management. In addition we invest heavily in the further development of our chefs and management personnel’s through development programmes and specific technical training.

The Recruitment Team:

The Recruitment Team is split into two separate teams, one recruiting for management positions within the restaurants and the other recruiting for positions within the Kitchen Production Support Centre. Both teams work to recruit the right people into the right positions.


The role of marketing within Moti Mahal Delux Hospitality is to ensure that the needs of customers are met whilst ensuring that the business makes money! Moti Mahal Delux Hospitality has a broad range of customers, under the choice of brands, Moti Mahal which famous for North Indian Food, China Wall serving authentic pan asean cuisine, Dosa n Chutny for southern delights and Darya for the continental fare.

Huge efforts are put in researching who our customers are and their needs. For our Fine Dine Restaurants and Home Delivery Services our primary customer segment is families with the need for a special place to share those everyday moments with each other at our restaurants or their own homes. For the Express Kiosks the primary customers are teens and young adults who seek convenience. We also conduct market research to find out what our customers think of the brand and what their dining experiences have been with us.

Having identified what the customer needs and wants are from our various brand, the Marketing team are responsible for developing new products and new promotions to satisfy these needs and increase sales and profitability.
